Symfony offers 2 main versions of their software LTS (currently 3.4) and Latest Stable (currently 4.1), which one should I prefer?

My personal thoughts on this are that it depends. Unless it's outlined in the scope I generally prefer the latest stable, with the intent of getting the project to the next LTS post launch with support tickets. If the project is one that we're not supporting post launch, I would opt to use LTS from the get-go.
